Red Velvet Cake by Chef Raditya Sawitri

Utensils :
● Stand Mixer
● Oven
● Baking sheets (18cm Diameter)
● Ring-shaped mold

Ingredients :
● 300gr Medium protein flour (Segitiga Brand)
● 250 Granulated Sugar
● 120gr Unsalted butter
● 5gr Baking soda
● 2 Eggs
● 20gr Cocoa powder (Chef use hershey’s Brand)
● 40gr Red food coloring
● 2gr Salt
● 1tsp Vanilla extract/vanilla essence
● 240gr Buttermilk (240ml liquid milk + 15gr vinegar)
● 1 tsp Vinegar (additional ingredients)

Steps :
● Add 120 gr unsalted butter into the dough bowl
● Add 250 g of granulated sugar
● Add 2 g of salt
● MIx until evenly blended using a mixer
● Mix the butter and sugar using a spatula
● Blend again until evenly blended using a mixer

● Mix 20 g of cocoa powder into a bowl , 40 g of red food coloring
● Then stir until evenly mixed
● Add 1 tsp vanilla essence into the red color
● Mix again until well blended, then set aside

● Add 1 egg into the bowl while stirring
● Blend until evenly blended using a mixer
● Add 1 more egg into the bowl while stirring
● Blend again until evenly blended using a mixer
● Turn off the mixer
● Mix using a spatula

● Add a mixture of 20 grams of cocoa powder and 40 grams of red food coloring that has been made into the dough bowl

● Blend again until evenly distributed using a mixer
● Turn off the mixer, then mix using a spatula

● Add 5 grams of baking soda into 300 grams of medium protein flour
● Slowly add 5 grams of baking soda and 300 grams of medium protein flour that has
been mixed into the bowl
● Blend until evenly mixed
● Increase mixer speed
● Clean the dough that is on the rim of the bowl using a spatula
● Blend the dough again until evenly distributed using a mixer
● Add 240 g of buttermilk (240 ml of liquid milk + 15 g of vinegar) into the dough bowl, while stirring

● Add a little milk to the remaining red food coloring
● Add all milk and coloring into a bowl

● Add 1 tsp vinegar in a bowl
● Stir until evenly mixed using a spatula
● Prepare an 18 cm diameter baking sheet that has been lined with parchment paper
(you can also use a 20 cm diameter baking sheet)
● Place the dough that has been made into the pan
● Pound the pan to flatten the dough
● Bake in the oven at 170 degrees for 45 minutes-1 hour (depending on the
specifications of the oven)
● After 45 minutes - 1 hour, take out from the oven

Tips : How to measure the maturity of the cake? Pierce the middle of the cake using a
toothpick, when the toothpick is clean, it means it is cooked

● Wait for it to cools down completely, or can be used the day after baking in the
oven

Cream Cheese Ingredients :
● 360gr Cream cheese
● 185gr Unsalted butter
● 250gr Icing sugar / powdered sugar
● 1tsp Vanilla extract / vanilla essence

Steps :
● Add 185 gr unsalted butter into the dough bowl
● Add 250 g of icing sugar / powdered sugar
● Blend until evenly blended using a mixer
● Occasionally mix using a spatula
● Add 360 grams of cream cheese into a bowl, while stirring
Tips : Add the cream cheese when the dough is light and fluffy

● Keep mixing until evenly blended using a mixer
● Add 1 tsp vanilla extract/vanilla essence into a bowl.(optional)
● Blend until evenly distributed using a mixer
● Occasionally mix the butter and sugar using a spatula
● Turn off the mixer
● Stir using a spatula, then set aside

● Prepare a piping bag and mold ring as shown on the video (if there is no mold ring, it’s okay to not use at all)
● Cut the red velvet cake that has been made into 3 parts
● Add 1 part of the red velvet cake into the ring mold
● Put cream cheese that has been made into a piping bag
sprinkle cream cheese on top of the cake with a piping bag like in the video
● Spread the cream cheese on top of the cake
● Repeat the same steps on red velvet cake with other cream cheese
● Put it in the refrigerator for 1-2 hours
● After 2 hours, take it out from the fridge
● Remove cake from the mold
● Grease the side of the cake with cream cheese that has been prepared earlier
● Prepare red crumble from the remaining pieces of red velvet cake, and it has been
baked in an oven at 120 degrees for 1 - 1.5 hours to dry
● After baking for 1 - 1.5 hours in the oven, blend them (using a blender)
● Coat the side of the cake with red crumble

Red Velvet Cake is ready to be served!!!


Bahan A :

  • tepung protein sedang/segitiga biru 300 gr
  • gula pasir 250 gr

  • cream cheese 360 gr

Cara Membuat :


Steps A :

  • masukkan 120 gr unsalted butter ke dalam mangkuk adonan
  • masukkan 250 gr gula pasir ke dalam mangkuk
  • masukkan 2 gr garam ke dalam mangkuk
  • aduk hingga tercampur merata dengan menggunakan mixer
  • aduk sesekali butter dan gula tersebut dengan menggunakan spatula
  • aduk kembali hingga tercampur merata dengan menggunakan mixer
  • campurkan 20 gr cocoa powder ke dalam mangkuk 40 gr pewarna merah.
  • lalu aduk hingga tercampur merata
  • masukkan 1 sdt vanilla essence kedalam warna merah
  • aduk kembali hingga tercampur merata ,lalu sisihkan
  • setelah seperti di video ,masukkan 1 butir telur ke dalam mangkuk sambil di aduk
  • aduk kembali hingga tercampur merata dengan menggunakan mixer
  • setelah seperti di video ,masukkan 1 butir telur lagi ke dalam mangkuk sambil diaduk
  • aduk kembali hingga tercampur merata dengan menggunakan mixer
  • setelah seperti di video ,matikan mixer
  • aduk aduk dengan menggunakan spatula
  • masukkan campuran 20 gr cocoa powder dan 40 gr pewarna merah tadi yang sudah dibuat ke dalam mangkuk adonan
  • aduk kembali hingga tercampur merata dengan menggunakan mixer
  • matikan mixer,lalu aduk aduk dengan menggunakan spatula
  • aduk kembali hingga tercampur merata dengan menggunakan mixer
  • masukkan 5 gr baking soda ke dalam 300 gr tepung protein sedang
  • Masukan 5 gr baking Soda dan 300 gr tepung protein sedang yang sudah dicampur ke dalam secara perlahan
  • Aduk hingga tercampur Merata
  • tambah kecepatan mixer
  • skrip adonan yang ada di pinggiran mangkuk dengan menggunakan spatula
  • Aduk kembali adonan hingga tercampur Merata dengan menggunakan mixer
  • masukkan 240 gr buttermilk (susu cair 240 ml + vinegar 15 gr) ke dalam mangkuk adonan,sambil diaduk
  • masukkan sedikit susu ke sisa pewarna merah
  • masukkan semua susu dan pewarna ke dalam mangkuk
  • masukkan 1 sdt vinegar ke dalam mangkuk
  • aduk hingga tercampur Merata dengan menggunakan spatula
  • siapkan loyang berdiameter 18 cm yang sudah dilapisi dengan kertas roti (boleh juga pakai loyang yang diameter 20 cm).
  • masukkan adonan yang tadi sudah dibuat ke dalam loyang
  • gebrak loyang untuk meratakan adonan tersebut
  • panggang di dalam oven dengan suhu 170 derajat selama 45 menit-1 jam (tergantung spesifikasi oven) .
  • setelah 45 menit - 1 jam , keluarkan dari oven
Tips : cara mengukur kematangan kue yaitu dengan menusuk bagian tengah kue dengan menggunakan tusuk gigi ,pada saat tusuk gigi bersih ,berarti sudah matang lalu tunggu hingga benar benar dingin , atau bisa digunakan sehari setelah dipanggang dengan oven

Steps Cream Cheese :

  • masukkan 185 gr unsalted butter ke dalam mangkuk adonan
  • masukkan 250 gr icing sugar/gula tepung ke dalam mangkuk
  • aduk hingga tercampur merata dengan menggunakan mixer
  • aduk sesekali dengan menggunakan spatula
  • aduk hingga tercampur merata dengan menggunakan mixer
  • aduk sesekali dengan menggunakan spatula
  • setelah seperti di video ,Masukkan 360 gr cream cheese ke dalam mangkuk ,sambil diaduk
Tips : tambahkan cream cheese nya saat adonan sudah ringan dan fluffy
  • aduk terus hingga tercampur merata dengan menggunakan mixer
  • masukkan 1 sdt vanilla extract/vanilla essence ke dalam mangkuk .(optional)
  • aduk kembali hingga tercampur merata dengan menggunakan mixer
  • aduk sesekali butter dan gula tersebut dengan menggunakan spatula
  • aduk kembali hingga tercampur merata dengan menggunakan mixer
  • setelah seperti di video ,matikan mixer
  • aduk aduk dengan menggunakan spatula ,lalu sisihkan
  • siapkan piping bag dan ring cetakan seperti di video (jika tidak ada ring cetakan tidak pakai tidak apa-apa)
  • potong kue red velvet yang tadi sudah dibuat menjadi 3 bagian
  • masukkan 1 bagian kue red velvet yang tadi sudah dipotong ke dalam ring cetakan
  • masukkan cream cheese yang tadi sudah dibuat ke dalam piping bag sesuai selera
  • taburi cream cheese di bagian atas kue dengan piping bag seperti di video
  • ratakan cream cheese di bagian atas kue tersebut
  • ulangi steps yang sama pada kue red velvet dengan cream cheese lainnya
  • setelah seperti di video ,masukan ke dalam kulkas selama 1-2 jam
  • setelah 2 jam ,keluarkan dari kulkas
  • keluarkan kue dari loyang/cetakan
  • olesi bagian samping kue dengan cream cheese yang tadi sudah dibuat
  • siapkan red crumble dari sisa potongan red velvet cake tadi,dan sudah dipanggang dengan oven suhu 120 derajat selama 1 - 1,5 jam hingga kering
  • setelah dipanggang selama 1 - 1,5 jam di dalam oven ,lalu blender hingga seperti di video
  • lapisi bagian samping kue dengan menggunakan red crumble seperti di video

Cocoa Coffee Cake by Chef Raditya Sawitri

Utensils :
● Microwave
● Mixer
● Oven
● Baking sheets (18cm Diameter)
● Ring-shaped mold

Cake Ingredients :
● 40gr Melted Butter
● 110gr Medium protein flour (Segitiga Biru Brand) can also use Low protein flour (Kunci Biru brand)
● 1.5tsp Baking powder
● 45ml Liquid milk (room temperature)
● 1tsp Vanilla essence
● 1gr Salt
● 100gr Granulated Sugar
● 5 Egg whites
● 5 Egg yolks (if you use big eggs, it is enough to use only 4 eggs yolks)
● 1 tsp Vinegar (optional) (additional ingredients)

Steps :
● Prepare 5 egg yolks in a dough bowl
● Add 1 gram of salt in a bowl
● Add 1 tsp of vanilla essence
● Mix until well blended
● Set aside the yolks mixture
● Prepare 5 egg whites in a dough bowl
● Add ½ tsp of vinegar into a bowl (optional)
● Blend the dough until smooth using a mixer

● When the eggs are foamy, gradually add (100 grams in total) of granulated sugar into the bowl
● Blend using a mixer
● Add some of the granulated sugar again into the bowl
● Blend again until evenly distributed using a mixer
● Add all the remaining sugar (100 gr in total) into a bowl
● Blend again until evenly mixed using a mixer
● If the texture is already on medium peak, turn off the mixer

● Add some of the egg white mixture into the egg yolk mixture
● Stir until evenly mixed using a spatula
● After that, add all the egg yolk mixture into the egg white mixture

● Mix the dough slowly using a spatula
● Add 110 g of medium protein flour and 1.5 tsp of baking powder into a sieve
● Sift medium protein flour and baking powder into a bowl
● Stir until evenly mixed
● Prepare 40 g of melted butter, then add 45 ml of milk
● Add some of the melted butter mixture into the bowl, then mix
● Stir until evenly mixed
● After that, add the rest of the melted butter mixture into a bowl
● Stir until evenly mixed

● Prepare a 18 cm diameter baking sheet that has been lined with parchment paper
● Place the dough into a baking sheet that has been lined with paper
● Pound the pan to spread the dough
● Bake in the oven at 170 degrees for 35-40 minutes (depending on the
specifications of the oven)
● After 40 minutes remove the dough from the oven and let it cool down

Tiramisu Cream Ingredients :
● 3 Egg yolks
● 250gr Whipping cream
● 4gr Gelatin
● 250gr Mascarpone cream
● 100gr Granulated Sugar
● 30ml water (2 tbsp)

Steps :
● Add 4 g of gelatin to 30 ml of water
● Let it be for 5 minutes (until it get hardened)
● Prepare a hot water in a pan
● Put the dough bowl containing egg yolks on the pan
● Add 100 g of granulated sugar in a bowl
● Stir until evenly mixed and turns slightly white
● When the color has whitened a bit, remove the dough from the pan
● Mix the dough again until it expands using a mixer
● When it has expanded, turn off the mixer

● Melt the gelatin in the Microwave for 10 seconds
● Add 250 grams of mascarpone cream into the egg yolk mixture bowl
● Blend again until evenly mixed using a mixer
● Clean the dough on the rim of the bowl using a spatula
● Add the melted gelatin into the bowl, while stirring
● Clean the dough on the edge of the bowl using a spatula

● Prepare 250 gr of whipping cream, then stir the whipping cream until the texture is
soft peak
● If the texture has reached a soft peak, turn off the mixer.
● Add some of the whipping cream mixture into the mascarpone mixture, then stir
until evenly distributed
● Add all the mascarpone mixture into the whipping cream mixture
● Stir again until evenly mixed
● After that, put the batter in the freezer for 30 minutes

Coffee Syrup Ingredients :
● 150ml Water
● 20gr Sugar
● 5gr Coffee powder
● Alcohol (optional)

Steps :
● Add all the ingredients into a saucepan, then heat it until it boils
● When it boils, turn off the stove and wait until it cools down

Ingredients :
● 4-5tbsp Cocoa powder (only for sprinkling on cake) (Chef uses Hershey’s Brand)
● Coffee syrup
● Cake that has been made (which has been cut into 3 parts)
● Tiramisu cream that was already made

Steps :
● Place 1 piece of cake into the ring mold

Tips : If you don’t have a ring mold that is okay

● Add coffee syrup on the cake using a food brush

Tips : Coffee syrup can also be added with other alcohol such as brandy, kahlua, rhum (as desire)

● Add cocoa powder using a sieve
● Add the tiramisu cream mixture that was made on top of the cake

Tips : Why do chefs use gelatin? So that the tiramisu cream on the cake is steady

● Flatten the Tiramisu cream using a Spatula
● Repeat the same steps on other cakes
● After that, place the cake in the freezer/refrigerator for 4-6 hours
● After 4-6 hours, take out the cake from the freezer/refrigerator then remove the
cake from the mold ring
● Spread the side of the cake with tiramisu cream according to desire
● Add tiramisu cream using a piping bag on top of the cake
● Flatten the edges of the cake using a spatula
● Sprinkle cocoa powder on top of the cake using a sieve

Cocoa Coffee Cake ready to be served!!!





Bahan A :

  • Melted butter 40 gr
  • tepung protein sedang/segitiga biru 110 gr (Bisa juga menggunakan Tepung protein rendah/Kunci biru)
  • baking powder 1,5 sdt
  • susu cair 45 ml (suhu ruangan)
  • Vanilla essence 1 sdt
  • garam 1 gr
  • gula pasir 100 gr
  • 5 butir Putih telur
  • 5 butir kuning telur. (jika telurnya besar gunakan 4 butir telur ,jika kecil gunakan 5 butir telur)
  • Vinegar ½ sdt (optional).

Bahan Tiramisu Cream :

  • 3 butir kuning telur
  • whipping cream 250 gr
  • gelatin 4 gr
  • mascarpone cream 250 gr
  • gula pasir 100 gr
  • air 30 gr (2 sdm)

Bahan Coffee Syrup :

  • air 150 ml
  • gula 20 gr
  • coffee powder 5 gr
  • alkohol (optional)

Bahan B :

  • cocoa powder 4-5 sdm (hanya untuk taburan pada cake)
  • coffee syrup
  • cake yang tadi sudah dibuat (yang sudah dipotong menjadi 3 bagian seperti di video)
  • tiramisu cream yang tadi sudah dibuat

Cara Membuat :


Steps A :

  • Siapkan 5 butir kuning telur di dalam Mangkuk adonan
  • Masukan 1 gr garam ke dalam Mangkuk
  • Masukan 1 sdt vanilla essence ke dalam Mangkuk
  • aduk hingga tercampur Merata
  • jika sudah tercampur rata ,sisihkan adonan
  • siapkan 5 butir putih telur didalam mangkuk adonan
  • masukkan ½ sdt vinegar ke dalam mangkuk (optional)
  • aduk adonan hingga Merata dengan menggunakan mixer
  • jika telur sudah berbusa seperti di video ,masukkan 100 gr gula pasir secara bertahap ke dalam mangkuk
  • aduk kembali dengan menggunakan mixer .
  • masukkan kembali gula ke dalam mangkuk
  • aduk kembali hingga tercampur merata dengan menggunakan mixer .
  • masukkan semua sisa gula pasir (100 gr) ke dalam mangkuk
  • aduk kembali hingga tercampur merata dengan menggunakan mixer (sampai tekstur medium peak).
  • jika tekstur sudah (medium peak) seperti di video ,matikan mixer .
  • masukkan sebagian adonan putih telur ke dalam adonan kuning telur seperti di video .
  • aduk hingga tercampur merata dengan menggunakan spatula .
  • setelah itu masukan semua adonan kuning telur ke dalam adonan putih telur seperti di video
  • aduk adonan secara perlahan dengan menggunakan spatula
  • masukkan 110 gr tepung protein sedang dan 1.5 sdt baking powder ke dalam saringan
  • saring tepung protein sedang dan baking powder ke dalam mangkuk
  • aduk hingga tercampur Merata
  • siapkan 40 gr melted butter ,lalu tambahkan 45 ml susu
  • masukkan sebagian adonan yang tadi sudah dibuat ke dalam melted butter, lalu aduk
  • aduk hingga tercampur Merata .
  • setelah itu masukan adonan melted butter ke dalam mangkuk ,seperti di video
  • aduk hingga tercampur merata
  • siapkan loyang diameter 18 cm yang sudah dialasi dengan kertas roti
  • masukan adonan kedalam loyang yang sudah dialasi kertas
  • Gebrak loyang untuk meratakan adonan
  • panggang di dalam oven dengan suhu 170 derajat selama 35-40 menit (tergantung spesifikasi oven)
  • setelah 40 menit keluarkan adonan dari dalam oven lalu diamkan hingga dingin

Steps Tiramisu Cream :

  • 3 butir kuning telur
  • whipping cream 250 gr
  • gelatin 4 gr
  • mascarpone cream 250 gr
  • gula pasir 100 gr
  • air 30 gr (2 sdm)

Steps Coffee Syrup :

  • masukkan semua bahan 150 ml air ,20 gr gula pasir ,5 gr coffee powder ke dalam panci , lalu panaskan hingga mendidih .
  • setelah mendidih ,matikan kompor dan tunggu hingga dingin .

Steps B :

  • masukkan 1 bagian cake ke dalam ring cetakan seperti di video
Tips : jika tidak punya ring cetakan tidak apa-apa , boleh tidak menggunakan ring cetakan
  • oleskan coffee syrup diatas cake dengan menggunakan kuas seperti di video
Tips : Coffee syrup bisa juga ditambahkan alkohol/brendi/dark rhum/kahlua (sesuai selera)
  • masukkan cocoa powder dengan menggunakan saringan seperti di video .(perubahan teks)
  • masukkan adonan tiramisu cream yang tadi sudah dibuat diatas cake
Tips : kenapa chef menggunakan gelatin ? karena supaya tiramisu cream pada cake nya steady
  • Ratakan Tiramisu cream dengan menggunakan Spatula .(perubahan tips ke steps)
  • ulangi step yang sama pada cake lainnya
  • setelah itu ,dinginkan cake ke dalam freezer/kulkas selama 4-6 jam
  • setelah 4-6 jam ,keluarkan cake dari dalam freezer/kulkas lalu lepas ring cetakan cake
  • olesi bagian samping kue dengan tiramisu cream sesuai selera seperti di video.
  • tambahkan tiramisu cream dengan menggunakan piping bag di atas cake seperti di video
  • rapikan pinggiran cake dengan menggunakan Spatula
  • taburkan cocoa powder di atas cake dengan menggunakan saringan .(seperti di video)
cocoa coffee cake siap disajikan…!!!
